Couscous Salad: Couscous mixed with chopped vegetables and a lemon vinaigrette.

Ingredients
For the Couscous:
1 cup couscous
1 cup boiling water
1 tablespoon olive oil
A pinch of salt
For the Vegetables:
1 red bell pepper, finely chopped
1 cucumber, finely chopped
1 medium carrot, finely chopped
1/4 red onion, finely chopped
1/2 cup cherry tomatoes, halved
1/4 cup fresh parsley, finely chopped
1/4 cup fresh mint, finely chopped (optional)
For the Lemon Vinaigrette:
1/4 cup olive oil
Juice of 1 lemon (about 3 tablespoons)
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
Prepare the Couscous:
In a large bowl, add the couscous, olive oil, and a pinch of salt.
Pour the boiling water over the couscous and cover the bowl with a plate or a lid.
Let it sit for 5 minutes to allow the couscous to absorb the water.
After 5 minutes, fluff the couscous with a fork to separate the grains.
Chop the Vegetables:
While the couscous is absorbing the water, start chopping the vegetables.
Place the chopped vegetables, parsley, and mint (if using) in a separate bowl.
Prepare the Lemon Vinaigrette:
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.
Combine:
Add the chopped vegetables to the bowl of fluffed couscous.
Pour the lemon vinaigrette over the mixture.
Mix and Serve:
Mix everything well to combine.
Taste and adjust the seasoning, if needed.
Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld together.
