Couscous Salad: Couscous mixed with chopped vegetables and a lemon vinaigrette.


For the Couscous:
  • 1 cup couscous

  • 1 cup boiling water

  • 1 tablespoon olive oil

  • A pinch of salt

For the Vegetables:
  • 1 red bell pepper, finely chopped

  • 1 cucumber, finely chopped

  • 1 medium carrot, finely chopped

  • 1/4 red onion, finely chopped

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup fresh parsley, finely chopped

  • 1/4 cup fresh mint, finely chopped (optional)

For the Lemon Vinaigrette:
  • 1/4 cup olive oil

  • Juice of 1 lemon (about 3 tablespoons)

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste


  1. Prepare the Couscous:

    1. In a large bowl, add the couscous, olive oil, and a pinch of salt.

    2. Pour the boiling water over the couscous and cover the bowl with a plate or a lid.

    3. Let it sit for 5 minutes to allow the couscous to absorb the water.

    4. After 5 minutes, fluff the couscous with a fork to separate the grains.

  1. Chop the Vegetables:

    1. While the couscous is absorbing the water, start chopping the vegetables.

    2. Place the chopped vegetables, parsley, and mint (if using) in a separate bowl.

  1. Prepare the Lemon Vinaigrette:

    1. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.

  1. Combine:

    1. Add the chopped vegetables to the bowl of fluffed couscous.

    2. Pour the lemon vinaigrette over the mixture.

  1. Mix and Serve:

    1. Mix everything well to combine.

    2. Taste and adjust the seasoning, if needed.

    3. Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld together.
